A small contribution to the mechanical assessment off fruits texture

Abstract
The fruit business is important in Mediterranean countries and the area of post-harvest science and technology has been busted up in the recent years. Texture is a fundamental property of fruit quality. The old Magness-Taylor (MT) penetration test is still the standard procedure to quantify fruit firmness. The MT results are the ones accepted by the Industry and used as a reference to compare the results of other testing methods namely non-destructive assessment of fruit texture. However, the non-destructive versions of the firmness tester have not yet found widespread approval and the availability of high-speed data acquisition and processing with friendly versions of mechanical testing machines renewed the interest of researchers in the development of rapid and simple methods for fruit texture evaluation based on force-deformation techniques. This work is a contribution to easier assessment of fruit texture, mainly in laboratory post-harvest studies to evaluate keeping quality of storage conditions, polymer coating of fruits, etc. It consists on the use of a small 2 mm diameter cylindrical probe instead of the traditional 11 and 8 mm probes. The advantages are: additional data, namely the skin resistance to penetration and the pulp firmness at one stroke; the convenience of avoiding fruit peeling, which is of considerable time saving value, as these evaluations require a great number of replicates to be meaningful, due to natural variance expected for biological materials and one can use the same probe for all range of different types of fruits, from cherries to pears.

The XVIII edition of the SIR conference will be held in Villa Rosa, a recently renovated ancient Neapolitan villa in Capri Island (Naples, Italy), in September 12th-14th 2024. The event will be organised with the support of the Department of Chemical, Materials and Industrial Production Engineering of the University of Naples Federico II.
All those with an interest in rheology, in all its aspects, are invited to submit contributions.
Selected papers will be eligible for a special issue in Rheologica Acta.
